Ingredients

for 6 servings

  • 3 hard-boiled eggs, halved
  • salt, to taste
  • black pepper, to taste
  • 1 teaspoon chaat masala, divided
  • ½ cup cooked potato cubes
  • 3 teaspoons mango chutney
  • 2 teaspoons chopped fresh cilantro

Preparation

  1. Season the eggs with salt and pepper to taste.
  2. In a small bowl, toss the potato cubes with ½ teaspoon of chaat masala.
  3. Place the remaining ½ teaspoon of chaat masala in a shallow bowl or plate. Dip the cut side of each egg half into the chaat masala.
  4. Top each egg half with a heaping tablespoon of the seasoned potato cubes.
  5. Add a dollop of mango chutney to each egg half. Top with chopped cilantro.
