Ingredients
for 28 tater tots
- 2 russet potatoes, washed and peeled
- 1.5 teaspoons kosher salt
- 1 teaspoon paprika
- ½ teaspoon onion powder
- 1 teaspoon garlic powder
- 2 tablespoons cornstarch
- 1 tablespoon melted unsalted butter
- ½ teaspoon dried dill
- 3 cups vegetable oil, for frying
- 2 tablespoons finely chopped fresh parsley
- 2 teaspoons chopped fresh chives
- flaky sea salt, to taste
- 1 tablespoon white vinegar powder
Preparation
- Cut the potatoes into thirds. In a large pot, bring salted water to a boil. Add the potatoes and cook until fork tender, about 6-7 minutes. Drain well and let them cool completely.
- Once cooled, shred the potatoes using a grater and transfer them to a large bowl.
- Season the potatoes with salt, paprika, onion powder and garlic powder. Add the cornstarch, melted butter, and dill. Mix until well combined.
- Form the potato mixture into small tots, about 1½ tablespoons each. You should have about 28 tots. Freeze for 1 hour or until firm.
- In a deep skillet or fryer, heat the vegetable oil to 350°F (175°C).
- Working in batches, carefully add the tots to the hot oil and fry until golden and crispy, about 3-4 minutes. Transfer the fried tots to a plate lined with paper towels.
- Garnish with parsley, chives, flaky sea salt, and white vinegar powder. Serve immediately
