Ingredients

for 28 tater tots

  • 2 russet potatoes, washed and peeled
  • 1.5 teaspoons kosher salt
  • 1 teaspoon paprika
  • ½ teaspoon onion powder
  • 1 teaspoon garlic powder
  • 2 tablespoons cornstarch
  • 1 tablespoon melted unsalted butter
  • ½ teaspoon dried dill
  • 3 cups vegetable oil, for frying
  • 2 tablespoons finely chopped fresh parsley
  • 2 teaspoons chopped fresh chives
  • flaky sea salt, to taste
  • 1 tablespoon white vinegar powder

Preparation

  1. Cut the potatoes into thirds. In a large pot, bring salted water to a boil. Add the potatoes and cook until fork tender, about 6-7 minutes. Drain well and let them cool completely.
  2. Once cooled, shred the potatoes using a grater and transfer them to a large bowl.
  3. Season the potatoes with salt, paprika, onion powder and garlic powder. Add the cornstarch, melted butter, and dill. Mix until well combined.
  4. Form the potato mixture into small tots, about 1½ tablespoons each. You should have about 28 tots. Freeze for 1 hour or until firm.
  5. In a deep skillet or fryer, heat the vegetable oil to 350°F (175°C).
  6. Working in batches, carefully add the tots to the hot oil and fry until golden and crispy, about 3-4 minutes. Transfer the fried tots to a plate lined with paper towels.
  7. Garnish with parsley, chives, flaky sea salt, and white vinegar powder. Serve immediately
